Moist, Low-Calorie Microwave Protein Fudge Muffins
Ingredients:
2 Egg whites (**If using liquid egg whites use 1/2 cup and add 20 calories)
1/4 cup pumpkin (3 T applesauce or other starchy carb works well too!)
2 T coconut flour* (1 T also works, and results in 40 fewer calories)
1/2 tsp baking powder
stevia or other granular sweetener to taste
1 T. cocoa powder (Hershey’s Special dark cocoa is best!)
Directions:Spray a soup bowl with a very light layer of oil to prevent sticking (not even necessary but makes cleaning up a bit easier). Mix ingredients well with fork, whisk or spatula. Microwave for 2:30-4+ min on High (depends on your microwave, altitude and the whim of the cupcake gods.)

Makes one HUGE serving.  155 calories **; 12 g protein; 16.5g carb; 4.5g fiber; 1.75g fat  Stellar stats.

Also…

I bought a ridiculously expensive pair of running shoes. But they fit like a glove and the manager of the Running Room helped me choose them, so I feel great about the purchase. I’m allowed to start running again next week, and really hope the money I invested will make a difference!

I’m back!

I took a good 2 weeks to pass exams, wallow in self pity and watch many many seasons of Drop Dead Diva. Now I’m seeing a physiotherapist and can exercise without pain. I’m also back at home and am eating balanced meals instead of randomly trying to finish the food in my cupboards. So I’ll give you folks an update, and promise to be more active (in real life and on this blog).

Intake

  • banana cheerios, soy milk, chopped banana
  • whole egg on toast with salsa
  • greek salad (veggies, feta, olve oil, vinegar)
  • 1/2 protein shake: protein powder, soy milk, berries, banana
  • chopped apple
  • seafood dinner (smoked salmon, shrimp, scallops, calimari, smoked oysters, crackers, light cream cheese, seafood sauce, pickles)

Exercise (finally! yay!)

  • strength training at physio
  • weights (arms) at gym
  • 20 minutes elliptical at gym

Just a thought.

A lot of female fitblrs complain about girls at the gym who wear make-up or dress in ways that annoy them. It’s not really any of our business what other people wear, how they do their make-up or how they style their hair. Some girls feel insecure at the gym and like to be wearing their favorite shade of eye shadow. Some girls like the feeling of running with their hair down. Some girls forgot to pack a gym shirt and so had to lift in a flowey top. Just let them be! The important thing is that they are working out and doing good for their bodies. The gym should be a POSITIVE place free of body policing.

I love before and afters, so inspiring especially celeb ones. It’s funny how people thinks its impossible for famous people to get fat, or they think their so perfect and that they don’t have to try to stay in shape or look good. When they probably put more effort into vanity than anyone else because it’s part of their job description. Any way here’s just a few I found on goooooooogle :)

Bake at 275 degrees for 2 hours. Flip after 1 hour

Yesterday I ate like crap

OREOS!! Omg, just such a fail. I’m not distraught, just a little dissapointed. It threw off my whole schedule. Now that classes are over and I’m just studying, my schedule is already precarious. I stayed up until 6am then went for a run/walk and got home at 7:15, showered and went to bed. My hip hates me, but for some reason I just couldn’t NOT run. It felt amazing, as I haven’t run outside for a long time. 

Goals for this week:

  • eat clean
  • sleep by midnight (definitely no more 7am bedtimes)
  • only 1 tv show or movie per day
  • go outside for at least 30 minutes every day
  • depending on physio appt tomorrow, exercise daily
  • contact parents at least once per day (missing them)

I always see on my dash how there aren’t enough pictures of larger ladies working out, so I asked Lovie to snap a few pics during our workout. Sadly, I missed more of the hardcore activities before I thought to ask for pics, but you are left with these lovely jewels for some Fat-Girl-Fitspo <3

I’m 265lbs. I look like sh*t at the gym. I know I am ‘fat as hell’ and not very ‘hardcore’ in some b*tch a** anon’s opinion, but clearly: IDGAF. I run hard. I do CrossFit. I do MetCon. I Olympic Lift. I IGNORE everyone who tells me I can’t or that I shouldn’t because of my size: F*CK THAT. You can do anything you set your mind to with proper practice/training, which doesn’t mean you need a trainer. All you need is a capability to read, to watch, or to follow after others. Teach yourself. Be your own GD role model and ROCK THAT SH*T. If I can do it, you can do it and I will be here to help and inspire and answer anything you wanna ask, so long as I am Tumblin’. Well…unless you’re a rude anon b*tch, then you can enjoy failing at making me feel bad, because idgaf <3
